Located in Mar Mikhayel (Beirut, Lebanon), the “Pay What You Think Fair” restaurant rotates chefs and serves food from the four corners of the world. Creating a fully functional organic restaurant in less than 25 square meters was a challenge.
The space was originally a Lebanese sandwich counter with features dating back to the 1950s and 1960s. Antoine Maalouf Architects worked on restoring many of the original features, such as the tiles, marble shelves, and tables, and integrating custom-crafted textures and fixtures to fit with the specific era.
